Spring onions are kept 3-4 days in the refrigerator. To clean them, you must remove the beard and the outer leaves and wash them. In order to avoid tears, before you slice them, dip them into cold water for 10 minutes. Cut the green part up to 1 cm from the head of the onion, split it into two halves and then proceed to slice them. The white parts can be browned with a drizzle of oil or grilled. The green parts can be used blanched and then diced to enrich your soups.
